  • 1/2 teaspoon vanilla extract
  • 1/2 cup unsalted butter (room temperature)
  • 1 1/2 cups granulated sugar
  • 2 large eggs (room temperature)
  • Zest from one medium orange
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 cups cranberries (fresh or frozen)
  • Optional: 1/2 teaspoon almond extract
  • Optional: 1/2 cup sliced almonds
  • Optional: 1 cup white chocolate chips
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan or line it with parchment paper.
  2. In a mixer, beat granulated sugar and butter until fluffy. Add eggs one at a time and mix in vanilla extract and orange zest.
  3. Gradually add flour, baking powder, and salt; mix until just combined. Gently fold in cranberries.
  4. Pour batter into the prepared pan and spread evenly.
  5. Bake for 40-50 minutes until edges are light brown. Let cool completely before icing.
  6. Whisk powdered sugar with vanilla extract and a bit of warm water to achieve desired consistency; drizzle over cooled bars.
