  • 2.2 lbs brisket or flank steak
  • 1/4 cup onion (thin strips)
  • 3 cups mozzarella cheese
  • 8 medium tomatoes
  • 1 whole head garlic
  • 1 tbsp cumin
  • 1 tsp whole cloves (or 3/4 teaspoon ground cloves)
  • 2 stick cinnamon sticks
  • 1 tbsp salt
  • 2.3 oz guajillo chiles
  • 1.4 oz pasilla chiles
  • 1½ tbsp chipotle chile
  • 1.1 oz ancho chiles
  • a pinch black pepper
  • 1 tbsp dried oregano
  • 2 cups water
  • 1 tbsp beef bouillon powder (stock powder)
  • 10 corn tortillas
  • 1 1/3 cups cooking oil (grape seed oil or avocado oil recommended)

Instructions

  1. Prepare ingredients by slicing onions, quartering tomatoes, and crushing garlic. Clean chiles by removing seeds.
  2. Toast spices in a dry pan until fragrant.
  3. Sear meat in oil until browned; set aside.
  4. In the same oil, sauté garlic and onions until translucent; add tomatoes and chiles.
  5. Blend the mixture into a smooth sauce; strain if desired.
  6. Pressure cook meat with sauce and water for about 72 minutes.
  7. Shred cooked meat and fry it with some sauce until coated.
  8. Fry tortillas with cheese until crispy; fill them with shredded meat and toppings.
