  • 3 pounds boneless chicken thighs and breasts
  • 1/4 cup butter
  • 1 large onion, peeled and chopped
  • 1 1/2 cups chopped celery
  • 1 1/2 cups chopped carrots
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 1 whole bay leaf
  • 8 cups chicken stock
  • 3 tablespoons chopped parsley
  • 2 cups all-purpose flour
  • 1/2 cup vegetable shortening (butter flavored preferred)
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3/4 cup buttermilk

Instructions

  1. In a large pot, melt butter over medium heat; sauté chopped onions for 3-4 minutes.
  2. Add celery and carrots; cook for another 2-3 minutes.
  3. Stir in chicken, thyme, bay leaf, and chicken stock; season with salt and pepper. Bring to a boil, then reduce heat and simmer for 20–25 minutes.
  4. For dumplings: Mix flour, shortening, salt, and baking powder until crumbly; blend in buttermilk until mostly smooth.
  5. Roll out dough on a floured surface; cut into pieces about 1×1.5 inches.
  6. Once chicken is cooked through, remove it from the pot; add dumplings to the broth one handful at a time. Simmer uncovered for about 8–10 minutes until cooked through.
  7. Shred the chicken and return it to the pot with chopped parsley; stir well before serving.
