- 1 1/2 cups chopped celery

- 1 whole bay leaf
- 8 cups chicken stock
- 3 tablespoons chopped parsley
- 2 cups all-purpose flour
- 1/2 cup vegetable shortening (butter flavored preferred)
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 3/4 cup buttermilk
Instructions
- In a large pot, melt butter over medium heat; sauté chopped onions for 3-4 minutes.
- Add celery and carrots; cook for another 2-3 minutes.
- Stir in chicken, thyme, bay leaf, and chicken stock; season with salt and pepper. Bring to a boil, then reduce heat and simmer for 20–25 minutes.
- For dumplings: Mix flour, shortening, salt, and baking powder until crumbly; blend in buttermilk until mostly smooth.

- Once chicken is cooked through, remove it from the pot; add dumplings to the broth one handful at a time. Simmer uncovered for about 8–10 minutes until cooked through.
