Ingredients

Scale
  • 1 lb ground beef (or ground chicken)
  • 4 cups napa cabbage (washed)
  • 3 garlic cloves (minced)
  • 2.5 tbsp regular soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp cornstarch (or potato starch or tapioca starch)
  • ½ tbsp white granulated sugar (or cane sugar)
  • 1 tsp ginger (grated)
  • 1/2 tsp chicken bouillon powder
  • 1/4 tsp white pepper (or black pepper)
  • 1 lb dumpling wrappers (approx. 50 store-bought wrappers)
  • Vegetable oil (or any neutral oil, for pan-frying or deep-frying)
  • Chinese chili oil (or homemade chili oil)
  • Dumpling dipping sauce (or homemade dumpling sauce)

Instructions

  1. Prepare the Filling: Finely chop the napa cabbage, massage with salt, let it rest for 10 minutes, then rinse and squeeze out excess liquid.
  2. Mix Filling: In a bowl, combine cabbage with ground beef, garlic, soy sauce, sesame oil, cornstarch, sugar, ginger, bouillon powder, and pepper until sticky.
  3. Assemble Dumplings: Place about 1.5 teaspoons of filling in the center of each wrapper. Moisten edges with water and fold over to seal.
  4. Cook Dumplings: Choose from pan-frying (add water after frying), boiling (until they float), or deep-frying until golden brown.
