Ingredients

  • 4 large tomatoes
  • 4 tomatillos
  • 1 white onion
  • 2 jalapenos
  • 2 cayenne peppers (or similar)
  • 1 lemon drop pepper
  • 1 green bell pepper
  • 2 garlic cloves
  • Sea salt
  • Fajita seasoning
  • 1 tbsp sugar

Instructions

  1. Preheat your grill or smoker to 225 degrees Fahrenheit.
  2. Wash and cut all vegetables in half.
  3. On a sheet pan, arrange the halved vegetables and sprinkle with sea salt and fajita seasoning.
  4. Smoke the vegetables on the grill for approximately 2 hours until they are tender.
  5. Let them cool briefly, then transfer to a food processor along with the sugar.
  6. Blend until you reach your desired consistency.
  7. Store in airtight containers in the fridge for up to 6 days or freeze for later use.
