Ingredients
- 1 lb spaghetti
- 4 poblano peppers
- 1 cup cilantro (leaves only)
- ½ onion (roughly chopped)
- 1 cup crema Mexicana or sour cream
- 8 oz cream cheese
- 3 cloves garlic
- 1 cube chicken bouillon
- ½ – 1 cup milk or water
- Optional: 1-2 serrano or jalapeño peppers
Instructions
- Cook the spaghetti according to package instructions. Drain and reserve some pasta water.
- Roast the poblano peppers until charred. Optionally, roast serrano or jalapeño peppers for added spice.
- In a blender, combine roasted peppers, cilantro, onion, crema, cream cheese, garlic, chicken bouillon, and ½ cup milk or reserved pasta water. Blend until smooth.
- Pour the sauce into a large pot over medium-low heat. Season with salt and pepper. Add cooked spaghetti, mixing well until coated. Adjust consistency with more milk or pasta water if needed.
