  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 4 cloves garlic (divided)
  • 1 pound shrimp (peeled and deveined)
  • 1/2 cup thinly sliced shallot
  • 1/2 teaspoon red pepper flakes
  • 2 cups halved cherry tomatoes
  • 1/4 cup minced flat-leaf parsley
  • 1/2 cup chicken broth
  • 2 cups fresh spinach (roughly chopped)
  • 1 cup heavy cream

Instructions

  1. Boil the fettuccine in salted water until al dente (about 8 minutes). Reserve 1/2 cup of pasta water before draining.
  2. In a skillet, heat butter and olive oil over medium heat. Sauté 2 cloves of sliced garlic until lightly browned. Remove garlic to prevent bitterness.
  3. Add shrimp to the skillet; season with salt and pepper. Cook for about 2 to 3 minutes per side until pink and opaque. Keep warm.
  4. In the same skillet, add shallots; sauté until softened (about 2 to 3 minutes).
  5. Add minced garlic and red pepper flakes; stir for about 30 seconds.
  6. Stir in cherry tomatoes and parsley, then pour in chicken broth; bring to a boil and reduce slightly (about 2 to 3 minutes).
  7. Add spinach until wilted, then return shrimp to the skillet along with heavy cream; stir well.
  8. Adjust sauce consistency with reserved pasta water as needed. Toss cooked fettuccine into the sauce and mix thoroughly.
  9. Serve immediately, garnished with extra parsley.
