- 2 cups halved cherry tomatoes

- 1/2 cup chicken broth
- 2 cups fresh spinach (roughly chopped)
- 1 cup heavy cream
Instructions
- Boil the fettuccine in salted water until al dente (about 8 minutes). Reserve 1/2 cup of pasta water before draining.
- In a skillet, heat butter and olive oil over medium heat. Sauté 2 cloves of sliced garlic until lightly browned. Remove garlic to prevent bitterness.
- Add shrimp to the skillet; season with salt and pepper. Cook for about 2 to 3 minutes per side until pink and opaque. Keep warm.
- In the same skillet, add shallots; sauté until softened (about 2 to 3 minutes).
- Add minced garlic and red pepper flakes; stir for about 30 seconds.
- Stir in cherry tomatoes and parsley, then pour in chicken broth; bring to a boil and reduce slightly (about 2 to 3 minutes).
- Add spinach until wilted, then return shrimp to the skillet along with heavy cream; stir well.
- Adjust sauce consistency with reserved pasta water as needed. Toss cooked fettuccine into the sauce and mix thoroughly.
