  • 2 hard-boiled eggs
  • 2 lbs new potatoes, scrubbed and halved
  • 1 lb green beans, trimmed and cut into thirds
  • 12 black olives, dry cured
  • 45 sprigs fresh flat parsley, stemmed and chopped
  • 45 sprigs chives, chopped
  • 1/3 cup Extra Virgin Olive Oil
  • 2 tbsp lemon juice
  • 2 tbsp white grape juice vinegar
  • 2 garlic cloves, minced
  • 2 tsp Dijon mustard
  • 1 tbsp chopped capers
  • 1 tbsp chopped black olives, dry cured
  • ½ tsp salt
  • ½ tsp freshly ground black pepper

Instructions

  1. Hard-boil the eggs: Place eggs in water, boil for 1 minute, then let sit covered for 10 minutes. Cool and slice.
  2. Cook potatoes: Halve potatoes and boil with salt until tender (12 minutes). Add green beans for the last 3 minutes of cooking. Drain and cool in ice water.
  3. Make vinaigrette: Shake together olive oil, lemon juice, vinegar, minced garlic, Dijon mustard, capers, chopped olives, salt, and pepper in a jar.
  4. Combine salad: In a bowl, mix herbs with half the vinaigrette. Add cooled potatoes and green beans; toss gently. Top with egg quarters and drizzle remaining dressing.
