  • 1 egg (or flax egg)
  • 2 Tbsp coconut oil (melted and cooled)
  • 3 Tbsp maple syrup
  • 1 tsp vanilla
  • 1 tsp molasses
  • 2 cups almond flour
  • 3/4 cup tapioca starch
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 2 cups powdered sugar (sifted)
  • 1 Tbsp egg white (omit to make vegan and add extra Tbsp cold water)
  • 34 Tbsp cold water
  • Sprinkles to top

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In one bowl, whisk together the egg (or flax egg), melted coconut oil, maple syrup, vanilla extract, and molasses.
  3. In another bowl, combine almond flour, tapioca starch, baking powder, and cinnamon. Gradually mix into the wet ingredients until a dough forms.
  4. Roll out the dough on a floured surface to about ¼ inch thick and use cookie cutters to shape your crackers.
  5. Bake for approximately 10 minutes until golden brown. Let cool completely before icing.
  6. For the icing, combine sifted powdered sugar with egg white (or water) and add cold water until desired consistency is reached.
  7. Dip cooled crackers in icing and sprinkle with colorful toppings.
