  • 2 pounds boneless, skinless chicken breast
  • 1/3 cup Italian style bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil (plus more as needed)
  • 16 ounces penne pasta (uncooked)
  • 6 tablespoons butter
  • 4 cloves garlic (pressed)
  • 2 tablespoons flour
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1/4 cup grated Parmesan
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • chopped parsley

Instructions

  1. Cook the penne pasta in boiling water until al dente, then drain and set aside.
  2. Mix breadcrumbs, grated Parmesan, garlic powder, and salt. Coat chicken cutlets in olive oil and dredge in the mixture.
  3. Heat olive oil in a skillet over medium heat; cook chicken until golden brown on both sides. Remove from skillet.
  4. In the same skillet, melt butter, then sauté pressed garlic until fragrant. Add flour and stir for one minute.
  5. Gradually whisk in heavy cream and chicken broth; bring to a simmer.
  6. Stir in Parmesan cheese, salt, and pepper until smooth.
  7. Toss cooked pasta with the sauce; serve topped with sliced crispy chicken and garnish with parsley.
