  • 1 ½ pounds boneless skinless chicken thighs
  • ¼ cup + 1 tablespoon cornstarch
  • ¼ cup all-purpose flour
  • ⅓ cup soy sauce or Tamari
  • ¼ cup hoisin sauce
  • ½ cup water
  • ¼ cup packed brown sugar
  • 3 tablespoons rice vinegar
  • 1 tablespoon finely minced fresh ginger
  • 3 garlic cloves (finely minced)
  • 1 teaspoon sriracha (optional)
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • 4 tablespoons avocado oil (divided)
  • Cooked white rice
  • Green onions (green parts only, thinly sliced, optional)
  • Toasted sesame seeds (optional)

Instructions

  1. Cut chicken thighs into bite-sized pieces. In a bowl, mix cornstarch, flour, salt, and black pepper before coating the chicken.
  2. Heat avocado oil in a skillet over medium-high heat. Fry half of the chicken for about 5–6 minutes until golden and crispy. Repeat with remaining chicken.
  3. Prepare the sauce by whisking together soy sauce, hoisin sauce, water, brown sugar, rice vinegar, ginger, garlic, and cornstarch in another bowl.
  4. Pour the sauce into the skillet over medium heat, cooking until thickened (2–3 minutes). Return chicken to the skillet until heated through.
  5. Serve over white rice garnished with green onions and sesame seeds if desired.
