- 1 ½ pounds boneless skinless chicken thighs
- ¼ cup + 1 tablespoon cornstarch
- ¼ cup all-purpose flour
- ⅓ cup soy sauce or Tamari
- ¼ cup hoisin sauce
- ½ cup water
- ¼ cup packed brown sugar
- 3 tablespoons rice vinegar
- 1 tablespoon finely minced fresh ginger
- 3 garlic cloves (finely minced)
- 1 teaspoon sriracha (optional)
- ¼ teaspoon black pepper
- ½ teaspoon salt
- 4 tablespoons avocado oil (divided)
- Cooked white rice
- Green onions (green parts only, thinly sliced, optional)
- Toasted sesame seeds (optional)
Instructions
- Cut chicken thighs into bite-sized pieces. In a bowl, mix cornstarch, flour, salt, and black pepper before coating the chicken.
- Heat avocado oil in a skillet over medium-high heat. Fry half of the chicken for about 5–6 minutes until golden and crispy. Repeat with remaining chicken.
- Prepare the sauce by whisking together soy sauce, hoisin sauce, water, brown sugar, rice vinegar, ginger, garlic, and cornstarch in another bowl.
- Pour the sauce into the skillet over medium heat, cooking until thickened (2–3 minutes). Return chicken to the skillet until heated through.
- Serve over white rice garnished with green onions and sesame seeds if desired.
