  • 2 green onions, chopped
  • 4 cups chopped cabbage
  • 2 heads baby bok choy, trimmed
  • 1 carrot, shredded
  • 3 garlic cloves, minced
  • 1/3 cup soy sauce (or coconut aminos)
  • 1/4 cup water
  • 2 tbsp honey
  • 1 tsp toasted sesame oil
  • 1 tsp cornstarch (or arrowroot)
  • Pinch of red pepper flakes

Instructions

  1. Cook the Beef: In a large skillet or wok over medium heat, add the ground beef. Break it apart as it cooks until no longer pink, about 5 minutes. Allow it to sit undisturbed for a few minutes to crisp.
  2. Make the Sauce: In a small bowl, whisk together soy sauce, water, honey, sesame oil, cornstarch, and red pepper flakes until smooth.
  3. Sauté Vegetables: In the same skillet, add green onions and cabbage; sauté for about 2 minutes. Add bok choy and carrot; cook until wilted (about 3 minutes). Add minced garlic; cook for an additional minute.
  4. Combine: Return cooked beef to the skillet and reduce heat to low. Pour in sauce and stir gently to coat everything evenly.
  5. Serve: Serve hot over rice or cauliflower rice; garnish with extra green onions or sesame seeds if desired.
