- ½ cup pineapple juice
- ¼ cup brown sugar
- ¼ cup ketchup
- 2 tbsp soy sauce
- 2 lb skinless, boneless chicken thighs
- 1 small pineapple (for grilling)

Instructions
- In a large bowl, whisk together pineapple juice, brown sugar, ketchup, soy sauce, minced garlic, ginger, rice vinegar, sriracha, sesame oil, and red pepper flakes.
- Add chicken thighs to the marinade. Cover and refrigerate for at least 2 hours or overnight for better flavor.
- Preheat your grill or oven to 375°F (190°C). Slice the pineapple into rings.
- Remove the chicken from the marinade and grill each side for about 20 minutes or bake until fully cooked (internal temperature should reach 165°F / 74°C).
