Ingredients
- 1 cup basmati rice
- 1.5 cups water (if using uncooked rice)
- 2 tbsp coconut oil
- 1/2 cup onion (chopped)
- 1 tsp ginger (freshly grated)
- 2 cloves garlic (minced)
- 1/2 cup cooked chicken (sliced thinly)
- 1/2 cup desiccated coconut (shredded)
- 1 teaspoon chicken powder
- 1/4 tsp white pepper
- 1 cup pineapple (chopped)
Instructions
- Rinse the basmati rice thoroughly. In a pot, combine the rice and water; cover and simmer for 12 minutes. Remove from heat and let it sit covered for an additional 10 minutes before fluffing.
- In a non-stick skillet, toast the desiccated coconut over medium heat until golden brown; set aside.
- Heat coconut oil in the skillet and sauté chopped onions, garlic, and ginger until fragrant. Add the sliced cooked chicken and cook until lightly golden.
- Stir in the cooked rice along with chicken powder and white pepper. Fold in pineapple chunks and toasted coconut until heated through.
- Serve garnished with optional macadamia nuts and green onions.
