  • 1 cup basmati rice
  • 1.5 cups water (if using uncooked rice)
  • 2 tbsp coconut oil
  • 1/2 cup onion (chopped)
  • 1 tsp ginger (freshly grated)
  • 2 cloves garlic (minced)
  • 1/2 cup cooked chicken (sliced thinly)
  • 1/2 cup desiccated coconut (shredded)
  • 1 teaspoon chicken powder
  • 1/4 tsp white pepper
  • 1 cup pineapple (chopped)

Instructions

  1. Rinse the basmati rice thoroughly. In a pot, combine the rice and water; cover and simmer for 12 minutes. Remove from heat and let it sit covered for an additional 10 minutes before fluffing.
  2. In a non-stick skillet, toast the desiccated coconut over medium heat until golden brown; set aside.
  3. Heat coconut oil in the skillet and sauté chopped onions, garlic, and ginger until fragrant. Add the sliced cooked chicken and cook until lightly golden.
  4. Stir in the cooked rice along with chicken powder and white pepper. Fold in pineapple chunks and toasted coconut until heated through.
  5. Serve garnished with optional macadamia nuts and green onions.
