  • ¾ cup almond milk (lukewarm)
  • 2 cups all-purpose flour
  • 1 ¾ cup white whole wheat flour
  • 3 Tbsp coconut sugar
  • 3 eggs (room temperature)
  • 9 Tbsp unsalted butter (room temperature)
  • ½ cup cream cheese (cold)
  • ¼ cup plain Greek yogurt (cold)
  • 3 Tbsp maple syrup
  • 1 ½ tsp cinnamon
  • ½ cup unsalted butter (melted)

Instructions

  1. In a small bowl, mix lukewarm almond milk and yeast; let sit for about 5 minutes until frothy.
  2. In a large mixing bowl or stand mixer, combine both flours, coconut sugar, and salt.
  3. Add eggs, vanilla extract, room temperature butter, and yeast mixture to dry ingredients; mix until combined.
  4. Knead dough on a floured surface for about 5–7 minutes until smooth; let rise in a greased bowl covered with a towel for 60–90 minutes.
  5. Roll out the risen dough into a rectangle; brush with melted butter and sprinkle with cinnamon and coconut sugar.
  6. Roll tightly into a log shape, slice into pieces, and place on a lined baking sheet.
  7. Bake at 350°F (175°C) for about 20 minutes until golden brown.
  8. For icing, mix cold cream cheese and Greek yogurt until smooth; add maple syrup and vanilla.
  9. Drizzle icing over slightly cooled rolls before serving.
