  • 3 lb chuck roast
  • 1/2 cup beef broth
  • 1 tbsp coconut aminos
  • 2 cloves minced garlic
  • 8 pepperoncini peppers
  • 3 tbsp ghee (or vegan butter)
  • 1 tbsp arrowroot powder
  • 2 tbsp water
  • 1 tbsp dried parsley
  • 1 tsp dried chives
  • 1 tsp dried dill
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried onion flakes
  • 1/2 tsp black pepper
  • 1.5 tsp sea salt

Instructions

  1. Place the chuck roast in a slow cooker and pour beef broth over it.
  2. Sprinkle all seasonings evenly over the meat and add ghee and pepperoncini.
  3. Cook on low for 8–10 hours or high for 4–5 hours until fork-tender.
  4. Shred the beef with forks and set aside.
  5. For gravy, heat remaining juices, mix arrowroot powder with water to create a slurry, then stir into the juices until thickened.
  6. Serve shredded beef over your preferred base with gravy poured generously on top.
