  • 2 large boneless, skinless chicken breasts (about 1 lb), cooked and shredded
  • 3 cups fresh baby spinach
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 cup non-fat Greek yogurt
  • 1/2 cup light cream cheese, softened
  • 3/4 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a medium casserole dish with nonstick spray.
  2. In a large bowl, mix Greek yogurt, cream cheese, minced garlic, salt, and pepper until smooth.
  3. Fold in the shredded chicken, spinach, chopped artichokes, and half of the mozzarella cheese until well combined.
  4. Transfer the mixture to the prepared casserole dish. Sprinkle the remaining mozzarella and Parmesan on top.
  5. Bake for 30-35 minutes or until hot and bubbly with golden cheese on top.
  6. Let cool for about 5 minutes before serving.
