Ingredients
- 1 lb. carrots, washed & peeled
- 1 Tbsp avocado oil (or olive oil)
- 2 Tbsp balsamic vinegar
- 2 Tbsp honey
- 2 garlic cloves, minced
- 1 tsp dried thyme
- ¼ tsp salt
- Cracked black pepper, to taste
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Cut the carrots on the bias into approximately 1½ inch pieces and place in a large bowl.
- In a small bowl, whisk together avocado oil, balsamic vinegar, honey, garlic, thyme, salt, and black pepper.
- Pour the glaze over the carrots and toss until well-coated.
- Transfer the carrots to the prepared baking sheet in a single layer and roast for 20-25 minutes until tender.
- Optional: Brush reserved glaze over the carrots during the last few minutes of roasting for extra flavor.
