  • 1 lb. carrots, washed & peeled
  • 1 Tbsp avocado oil (or olive oil)
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp honey
  • 2 garlic cloves, minced
  • 1 tsp dried thyme
  • ¼ tsp salt
  • Cracked black pepper, to taste

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut the carrots into similar-sized pieces, about 1½ inches long.
  3. In a large bowl, whisk together the avocado oil, balsamic vinegar, honey, minced garlic, thyme, salt, and pepper.
  4. Toss the carrot pieces in the glaze until evenly coated, then spread them out on the baking sheet.
  5. Roast for 20-25 minutes until tender; brush with any reserved glaze during the last few minutes.
  6. Drizzle with additional balsamic glaze before serving.
