  • 1 pound boneless, skinless chicken thighs or breasts
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1/2 cup BBQ sauce (mesquite flavor)
  • 1/4 cup honey
  • 1 cup mixed vegetables (peas, carrots, corn, bell peppers)
  • 2 tablespoons vegetable or olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare all ingredients by cutting chicken into bite-sized pieces and rinsing the rice until the water runs clear.
  2. In a large skillet, heat 1 tablespoon oil over medium-high heat. Sear chicken pieces seasoned with half of the spices for 3–4 minutes on each side until golden brown; set aside.
  3. In the same skillet, add remaining oil and toast the rice with leftover seasoning for 1–2 minutes.
  4. Pour in chicken broth, BBQ sauce, and honey; stir to combine.
  5. Nestle seared chicken back into the mixture, cover with a lid, and simmer on low for about 15 minutes.
  6. Add mixed vegetables on top without stirring; cover again and cook for an additional 5 minutes until everything is tender.
  7. Allow to rest for 5 minutes before fluffing rice with a fork.
