  • 8 skinless, boneless chicken thighs
  • 2 tbsp cornflour (cornstarch)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp vegetable oil
  • 1 tbsp unsalted butter
  • 4 cloves minced garlic
  • 110 g (1/3 cup) honey
  • 80 ml (1/3 cup) chicken stock
  • 1 tbsp rice vinegar
  • 1 tbsp light soy sauce
  • 1 tbsp finely chopped fresh parsley
  • 1/2 tsp chilli flakes
  • boiled rice

Instructions

  1. In a mixing bowl, coat chicken thighs with cornflour, salt, and pepper.
  2. Heat vegetable oil in a large frying pan over high heat. Cook chicken until golden brown on both sides.
  3. Add butter and garlic to the pan; reduce heat to medium.
  4. In a separate bowl, mix honey, chicken stock, rice vinegar, and soy sauce. Pour this mixture into the pan.
  5. Increase heat to boil, then simmer until the sauce thickens and chicken is cooked through.
  6. Serve hot over boiled rice, garnished with parsley and chili flakes.
