  • 1 ½ pounds boneless skinless chicken (cut into 1-inch pieces)
  • 2 cloves garlic (minced)
  • 4 cups reduced-sodium chicken broth
  • 16 ounces uncooked penne pasta
  • 1 tablespoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon pepper
  • 1 cup parmesan cheese (grated)
  • 1/2 cup heavy cream
  • 1 cup sun-dried tomatoes (drained and roughly chopped)
  • 1 cup fresh spinach

Instructions

  1. Sauté chicken in olive oil using the Instant Pot until browned.
  2. Add minced garlic and cook briefly; then deglaze with broth.
  3. Incorporate remaining broth, pasta, Italian seasoning, paprika, and pepper without stirring.
  4. Seal pot and pressure cook on high for 4 minutes.
  5. Release pressure and stir in cheese and cream until melted.
  6. Fold in spinach and sun-dried tomatoes before serving.
