- 2 lbs chicken breast or thighs (cut into 1–2 inch pieces)
- 1 cup orange juice (no sugar added)
- 1 tablespoon grated ginger
- 6 cloves minced garlic
- 2 tablespoons vegetable oil
- ¼ cup granulated sugar
- ¼ cup brown sugar
- ¼ cup lite soy sauce
- 1 tablespoon Sriracha (to taste)
- 2 tablespoons cornstarch
- 2 tablespoons orange juice (for thickening)
- 4 green onions (sliced)
- extra orange zest
Instructions
- Cut chicken into bite-sized pieces.
- In the Instant Pot, set to ‘Sauté’ mode and heat oil. Add garlic and ginger; sauté until fragrant.
- Add chicken and pour in orange juice, vinegar, sugars, soy sauce, Sriracha, and zest. Stir well.
- Close the lid and set to ‘Manual’ on high for 8 minutes. Allow natural release for 5 minutes before quick releasing.
- Mix cornstarch with orange juice in a bowl and stir into the pot; select ‘Sauté’ to thicken the sauce.
- Serve garnished with sliced green onions and extra zest.
