Ingredients

  • 2 lbs chicken breast or thighs (cut into 12 inch pieces)
  • 1 cup orange juice (no sugar added)
  • 1 tablespoon grated ginger
  • 6 cloves minced garlic
  • 2 tablespoons vegetable oil
  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • ¼ cup lite soy sauce
  • 1 tablespoon Sriracha (to taste)
  • 2 tablespoons cornstarch
  • 2 tablespoons orange juice (for thickening)
  • 4 green onions (sliced)
  • extra orange zest

Instructions

  1. Cut chicken into bite-sized pieces.
  2. In the Instant Pot, set to ‘Sauté’ mode and heat oil. Add garlic and ginger; sauté until fragrant.
  3. Add chicken and pour in orange juice, vinegar, sugars, soy sauce, Sriracha, and zest. Stir well.
  4. Close the lid and set to ‘Manual’ on high for 8 minutes. Allow natural release for 5 minutes before quick releasing.
  5. Mix cornstarch with orange juice in a bowl and stir into the pot; select ‘Sauté’ to thicken the sauce.
  6. Serve garnished with sliced green onions and extra zest.
