  • 1/2 cup unsalted butter
  • 6 ounces dark baking chocolate
  • 1 1/4 cup white granulated sugar
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 1/2 cups powdered sugar (or more)
  • 4 ounces cream cheese (softened to room temperature)
  • 4 tablespoons unsalted butter (softened to room temperature)
  • 1/2 teaspoon peppermint extract
  • Gel mint green food coloring (a few drops)
  • 2 ounces dark baking chocolate (melted)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8-inch square baking pan with aluminum foil.
  2. In a medium saucepan over medium heat, melt the unsalted butter and dark chocolate together until smooth.
  3. Remove from heat and stir in the granulated sugar, followed by the eggs and flour until combined.
  4. Pour the batter into the prepared pan and bake for 25-30 minutes until edges pull away from the pan.
  5. Allow brownies to cool completely before frosting with mint cream cheese frosting made from softened cream cheese, powdered sugar, butter, peppermint extract, and food coloring.
  6. Drizzle melted dark chocolate on top before slicing into squares.
