  • 12 ounces pasta (fusilli or rotini)
  • 1 pint cherry tomatoes (halved)
  • 1 bell pepper (chopped)
  • 1 shallot (chopped)
  • 1 cup marinated artichoke hearts
  • 1/4 cup pitted kalamata olives
  • 6 pepperoncini (chopped)
  • 6 to 8 ounces turkey slices
  • 6 ounces mozzarella cheese
  • Fresh parsley and basil

Instructions

  1. Bring a large pot of water to boil. Add salt and cook the pasta until al dente. Drain and transfer to a mixing bowl.
  2. Whisk together olive oil, white grape juice vinegar, minced garlic, oregano, red pepper flakes, salt, and black pepper in a small bowl.
  3. Add cherry tomatoes, bell pepper, shallot, artichokes, olives, pepperoncini, turkey slices, mozzarella cheese, parsley, and basil to the pasta.
  4. Pour the dressing over the salad and toss gently to combine. Let it sit for about 30 minutes before serving.
