  • 1 cup light corn syrup
  • 1/2 cup unsalted butter
  • 4 large eggs (beaten)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1 cup chopped pecans
  • 1 cup unsalted butter (room temperature)
  • 4 cups powdered sugar
  • 1 teaspoon vanilla

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Cream butter and sugar until fluffy, then mix in eggs one at a time.
  3. In another bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt; gradually add to the wet ingredients along with milk.
  4. Fill liners two-thirds full and bake for 20-25 minutes until a toothpick comes out clean.
  5. Prepare the filling by heating sugar, corn syrup, butter, beaten eggs, vanilla, and salt until thickened; stir in chocolate chips and pecans.
  6. Once cooled, cut out the tops of the cupcakes and fill with the mixture.
  7. For frosting, beat butter until smooth; add powdered sugar gradually until fluffy; mix in vanilla.
  8. Frost each cupcake generously before serving.
