  • 1/2 medium onion (diced)
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic (pressed)
  • 1/2 tablespoon minced ginger
  • 1/2 tablespoon sesame oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes
  • 2 teaspoons corn starch
  • 2 teaspoons water
  • 1 cup rice
  • 16 ounces tricolor coleslaw mix
  • 1 cup shredded carrots
  • 1 cucumber (thinly sliced)
  • 1/4 cup spicy mayo
  • yum yum sauce

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks.
  2. Add diced onion and sauté for 3-4 minutes until translucent. Stir in pressed garlic and minced ginger.
  3. Combine soy sauce, brown sugar, garlic powder, onion powder, and crushed red pepper flakes in a bowl; pour over the beef mixture and stir well.
  4. Mix cornstarch with water until smooth; add to the skillet and cook for an additional 2-3 minutes until thickened.
  5. Prepare rice according to package instructions.
  6. To serve, layer rice in bowls, top with beef mixture, coleslaw mix, shredded carrots, sliced cucumber, spicy mayo, and yum yum sauce.
