Ingredients

  • 2 lb beef (sliced)
  • 1 lb sweet potato noodles
  • 3 medium carrots (julienned)
  • 1 white onion (sliced)
  • 1/2 bunch green onions (chopped)
  • 6 garlic cloves (minced)
  • 1/2 lb spinach
  • 4 tbsp sesame oil
  • 1 tbsp olive oil
  • 6 tbsp soy sauce
  • 3 tbsp brown sugar

Instructions

  1. Gather all ingredients and chop vegetables as needed.
  2. Bring water to a boil in a pot, add a bit of olive oil, and cook sweet potato noodles for 5-6 minutes until tender. Drain well.
  3. Preheat a skillet over high heat and sauté sliced beef until golden brown; season with half of the soy sauce, sesame oil, and brown sugar.
  4. In a large bowl, combine cooked noodles with sautéed beef.
  5. In the same skillet, cook carrots and onion until softened.
  6. Add remaining soy sauce, sesame oil, brown sugar, minced garlic, and green onions; stir-fry for a few minutes.
  7. Stir in spinach until wilted; turn off heat.
  8. Mix cooked vegetables with noodles and beef until well combined.
  9. Serve warm.
