Ingredients
- 2 lb beef (sliced)
- 1 lb sweet potato noodles
- 3 medium carrots (julienned)
- 1 white onion (sliced)
- 1/2 bunch green onions (chopped)
- 6 garlic cloves (minced)
- 1/2 lb spinach
- 4 tbsp sesame oil
- 1 tbsp olive oil
- 6 tbsp soy sauce
- 3 tbsp brown sugar
Instructions
- Gather all ingredients and chop vegetables as needed.
- Bring water to a boil in a pot, add a bit of olive oil, and cook sweet potato noodles for 5-6 minutes until tender. Drain well.
- Preheat a skillet over high heat and sauté sliced beef until golden brown; season with half of the soy sauce, sesame oil, and brown sugar.
- In a large bowl, combine cooked noodles with sautéed beef.
- In the same skillet, cook carrots and onion until softened.
- Add remaining soy sauce, sesame oil, brown sugar, minced garlic, and green onions; stir-fry for a few minutes.
- Stir in spinach until wilted; turn off heat.
- Mix cooked vegetables with noodles and beef until well combined.
- Serve warm.
