  • 1 medium onion, diced

  • 4 cups vegetable broth (low-sodium recommended)
  • 2 medium carrots, sliced
  • 1 large potato, diced
  • ¼ cup fresh lemon juice (about 2 lemons)
  • 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent. Stir in minced garlic and sauté until fragrant.
  2. Add chopped cabbage, sliced carrots, and diced potato to the pot. Pour in vegetable broth and bring to a boil.
  3. Reduce heat to low, cover the pot, and let it simmer for about 15 minutes or until vegetables are tender. Stir occasionally.
  4. Remove from heat and mix in fresh lemon juice and chopped dill. Season with salt and pepper to taste. Serve hot or chilled as desired.
