  • 2 tablespoon extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 150 grams fresh mozzarella (or ½ to â…“ cup shredded firm mozzarella)
  • 1 tablespoon lemon juice
  • 2 tablespoon grated parmesan cheese
  • 1 tablespoon fresh parsley
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the dough as per the easy no-knead recipe; preheat your oven while shaping the pizza.
  2. Shape dough into a 9×13 inch rectangle on parchment paper; transfer to a pizza peel or rimmed baking sheet.
  3. In a glass jar, combine olive oil, water, parsley, grated garlic, lemon zest, lemon juice, salt, and pepper. Shake until emulsified.
  4. Create dimples in the dough; drizzle the brine over it and add mozzarella cheese.
  5. Bake on a preheated pizza stone for 8-10 minutes until golden brown.
  6. Once out of the oven, drizzle with fresh lemon juice and sprinkle with parmesan and parsley before serving.
