Ingredients

Scale
  • 1 1/4 cups whole milk, warmed to about 110 degrees
  • 2 1/4 tsp active dry yeast
  • 1 tsp granulated white sugar, to bloom the yeast
  • 4 3/4 cups all-purpose flour, spooned and leveled
  • 1 1/2 tsp salt
  • 2 tbsp granulated white sugar
  • 2 eggs, whisked
  • 1/2 cup unsalted butter, very softened
  • 1/2 tbsp vanilla
  • 2 tbsp lemon zest, about 2 lemons zested
  • 1/2 cup unsalted butter, very softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated white sugar
  • 2 tbsp lemon zest, about 2 lemons zested
  • 2 tbsp fresh lemon juice
  • 1/4 tsp salt
  • 1/4 cup heavy cream, for pouring in between the rolls
  • 1/4 cup unsalted butter, softened
  • 4 oz cream cheese, cold
  • 3/4 cup powdered sugar
  • 1/2 tbsp lemon zest, about 1/2 lemon zested
  • 1/2 tbsp fresh lemon juice

Instructions

  1. Prepare the yeast mixture by combining warmed milk, active dry yeast, and granulated sugar; let it sit until foamy.
  2. In a mixing bowl, combine flour and salt. Add the yeast mixture, eggs, softened butter, vanilla extract, and lemon zest. Mix until a soft dough forms.
  3. Knead the dough until smooth and elastic (about 5-10 minutes). Let it rise in a greased bowl until doubled in size (approximately 1 hour).
  4. For the filling, mix together softened butter, brown sugar, granulated sugar, lemon zest, lemon juice, and salt.
  5. Roll out the dough into a rectangle, spread the filling evenly, roll tightly into a log shape, and slice into pieces.
  6. Arrange rolls on baking sheets lined with parchment paper; allow them to rise again for 30 minutes.
  7. Bake at 350°F (175°C) for about 20 minutes until golden brown.
  8. While baking, prepare the frosting by combining softened butter, cold cream cheese, powdered sugar, lemon zest, and fresh lemon juice until creamy.
  9. Drizzle or spread frosting over warm rolls before serving.
