  • 300g bucatini pasta
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white grape juice
  • 250g cooked lobster meat, chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook bucatini until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a skillet, melt butter and olive oil over medium heat. Add garlic and red pepper flakes, sautéing until fragrant.
  3. Pour in grape juice and simmer for 2–3 minutes until slightly reduced.
  4. Stir in lobster meat and warm through.
  5. Add drained bucatini to the skillet, tossing with the sauce and gradually adding reserved pasta water for a silky consistency.
  6. Season with salt and pepper, then mix in chopped parsley before serving.
