Ingredients
- 1/2 medium red onion
- 1 can chickpeas
- 1 can butter beans
- 1 cup green olives
- 1/2 cup mint leaves
- 1/2 cup parsley
- 3 tbsp olive oil
- 3 garlic cloves
- 3 tsp za’atar
Instructions
- Thinly slice the onion and combine it with salt, lemon juice, and zest in a large bowl. Set aside.
- Drain and rinse chickpeas and butter beans; chop olives and mince herbs.
- Add chickpeas, butter beans, olives, mint, and parsley to the bowl with onions.
- In a pan over medium heat, sauté garlic in olive oil until fragrant. Stir in za’atar and remove from heat.
- Pour the marinade over the salad mixture and toss to combine. Adjust seasoning as needed.
