  • 1.5 cups curly parsley (finely chopped)
  • 16 oz can chickpeas (rinsed and drained)
  • 3 persian cucumbers (diced)
  • 1.5 cups cherry tomatoes (halved)
  • ¼ cup pepperoncinis (thinly sliced)
  • ½ cup red onions (thinly sliced)
  • ¼ cup kalamata olives (sliced)
  • 1 cup feta cheese (diced or crumbled)
  • â…“ cup olive oil
  • Juice of 1 lemon
  • 1 tbsp dijon mustard
  • 1 tsp garlic powder
  • ½ tsp dried oregano
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

  1. In a large mixing bowl, combine chopped romaine lettuce and parsley.
  2. Add rinsed chickpeas, diced cucumbers, halved cherry tomatoes, sliced pepperoncinis, red onions, olives, and feta cheese if desired.
  3. In another bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic powder, oregano, salt, and pepper.
  4. Drizzle the dressing over the salad mixture and toss gently until everything is evenly coated. Serve immediately or refrigerate for later enjoyment.
