Ingredients

  • 1 lb ground beef
  • 8 flour tortillas (taco size)
  • 30 oz can of refried beans
  • 1/2 cup mild salsa
  • 10 oz can of red enchilada sauce
  • 2 cups shredded cheddar/jack cheese
  • Assorted toppings: olives, tomatoes, lettuce, green onions, sour cream

Instructions

  1. Cook ground beef according to taco seasoning packet instructions and crumble using a potato masher.
  2. Heat oil in a fry pan over medium/high heat and fry each tortilla until golden brown.
  3. Preheat your oven to 375ºF.
  4. On a greased baking sheet, layer ingredients: one tortilla topped with refried beans, taco meat, salsa; add another tortilla on top coated with enchilada sauce and cheese. Repeat for additional layers.
  5. Bake for 5-7 minutes until heated through and cheese is melted.
