  • 4 small flour tortillas
  • 4 small corn tortillas
  • 2 tbsp vegetable oil
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup refried beans
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup diced tomatoes
  • ¼ cup sliced black olives (optional)
  • ¼ cup chopped green onions
  • Sour cream, for serving
  • Salsa, for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, brown the ground beef or turkey over medium heat. Drain excess fat, then stir in taco seasoning and water. Simmer for 5 minutes.
  3. Lightly fry each corn tortilla in vegetable oil until crispy; drain on paper towels.
  4. On each flour tortilla, spread refried beans, top with meat mixture, then add a fried corn tortilla.
  5. Sprinkle shredded cheese on top and bake for 5–7 minutes until cheese melts.
  6. Remove from oven and add fresh toppings like diced tomatoes and green onions.
  7. Serve hot with sour cream and salsa.
