  • 1 medium red bell pepper, diced
  • 34 scallions, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil or avocado oil
  • 1 cup chicken broth or water
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Marinate chicken thighs with jerk seasoning for at least 30 minutes.
  2. In a large skillet, heat oil over medium-high heat and sear the marinated chicken until golden brown; set aside.
