  • 1 lb lean ground chicken
  • ½ tsp salt
  • ½ tsp black pepper
  • 4 cloves garlic (pressed)
  • ½ yellow onion (diced (about 1 cup))
  • ½ cup chopped sundried tomatoes
  • 1 tbsp Italian seasoning
  • 1 tsp red pepper flakes
  • ½ tsp paprika
  • 3 large handfuls fresh spinach
  • 2.5 cups low sodium chicken broth
  • 10 oz small pasta (small pasta shells (about 1 + ¼ cup dry pasta))
  • ½ cup grated Parmesan cheese
  • ½ cup plain Greek yogurt
  • Fresh basil (for topping)

Instructions

  1. Heat 1 tbsp olive oil in a large pan over medium-high heat. Add ground chicken and cook until no longer pink, seasoning with salt and pepper.
  2. Stir in remaining olive oil, garlic, onion, sun-dried tomatoes, Italian seasoning, red pepper flakes, and paprika. Cook until the onion is translucent and garlic is fragrant. Add spinach until wilted.
  3. Pour in chicken broth and add the dry pasta; bring to a boil. Reduce heat to simmer, cover, and cook for about 15-20 minutes or until pasta is tender.
  4. Remove from heat and stir in Parmesan cheese and Greek yogurt. Garnish with fresh basil before serving.
