Ingredients
- 1 lb smoked sausage (kielbasa or turkey)
- 1 1/2 cups uncooked long grain rice
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 2 1/2 cups chicken broth
- 1/2 cup barbecue sauce
- Salt and pepper to taste
Instructions
- Heat 1 tbsp olive oil in a large skillet over medium-high heat. Sear sliced sausage until browned; remove from skillet.
- In the same pan, add remaining oil if needed and sauté onion for about 5 minutes until translucent.
- Stir in minced garlic and cook for about 30 seconds until fragrant.
- Add uncooked rice to the pan; stir to coat in oil and toast for 2–3 minutes until lightly golden.
- Pour in chicken broth and barbecue sauce, scraping the bottom of the pan to incorporate any browned bits.
- Return sausage to the pan, bring to a simmer, cover, and reduce heat to low.
- Simmer for about 18–20 minutes, stirring once halfway through, until rice is cooked.
- Let sit covered for an additional 5 minutes before fluffing with a fork and seasoning with salt and pepper as needed.
