  • 1/2 lb penne pasta
  • 1 lb chicken breast (cubed)
  • 1 small yellow onion (diced)
  • 3 cloves garlic (minced)
  • 1 can (15 oz) diced tomatoes
  • 2 cups fresh spinach (chopped)
  • 2 3/4 cups chicken broth
  • 4 oz cream cheese
  • 1/2 cup mozzarella cheese (grated)
  • 1/3 cup parmesan cheese (grated)
  • 1/2 tbsp olive oil
  • 1/2 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp dried basil

Instructions

  1. In a large deep skillet over medium heat, add olive oil and butter. Once hot, sauté the cubed chicken and diced onions for about 8-10 minutes until fully cooked.
  2. Add garlic, diced tomatoes, spinach, penne pasta, chicken broth, salt, black pepper, dried basil, cream cheese, and mozzarella to the skillet. Stir well to combine.
  3. Bring the mixture to a low simmer and cook for about 20 minutes until the penne is al dente and the sauce thickens. Stir occasionally to prevent sticking.
  4. Remove from heat and let sit for a couple of minutes before serving. Top with freshly grated parmesan if desired.
