  • 1 ½ lbs boneless skinless chicken breasts
  • 2 large eggs
  • 1 cup cornstarch
  • ¼ cup flour
  • Canola or vegetable oil (for frying)
  • 1 medium yellow onion
  • 1 red bell pepper
  • 2 cups pineapple chunks
  • ½ cup sweet chili sauce
  • 2 teaspoons Asian chili paste

Instructions

  1. In a medium bowl, mix cornstarch and flour. Dredge chicken pieces first in beaten eggs, then coat with the cornstarch mixture.
  2. Heat oil in a large pot or skillet until hot. Fry coated chicken in batches for about 3-4 minutes until golden brown and cooked through. Use a slotted spoon to remove and drain on paper towels.
  3. In another skillet, heat one tablespoon of oil over medium heat. Add sliced onion, bell pepper, and pineapple; sauté for 3-4 minutes until vegetables are tender.
  4. Pour sweet chili sauce and Asian chili paste into the skillet with vegetables; simmer for one minute before adding fried chicken. Toss gently to coat.
  5. Garnish with sesame seeds and sliced green onions before serving.
