- 1 cup (50 g) mini vegan marshmallows
- ½ cup (91 g) semi-sweet chocolate chips
- ½ cup (91 g) peanut butter chips
Instructions
- In a mixing bowl, cream together unsalted butter, creamy peanut butter, granulated sugar, and light brown sugar until smooth.
- Add the egg and vanilla extract; mix until combined.
- In another bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture; stir until just combined.
- Fold in mini vegan marshmallows, chocolate chips, and peanut butter chips.
- Chill the dough for 1 hour in the refrigerator.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
