  • 3 lb beef tenderloin, trimmed
  • Salt & pepper, to season the meat
  • 1 cup pineapple juice
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 2 tbsp yellow mustard
  • 2 cinnamon sticks
  • 6 cloves
  • 1/4 tsp fresh ground nutmeg
  • 1 can pineapple slices, drained (8oz can)

Instructions

  1. Preheat oven to 375°F.
  2. In a medium saucepan, combine pineapple juice, brown sugar, honey, yellow mustard, cinnamon sticks, cloves, and nutmeg. Simmer until thickened (15-20 minutes).
  3. Place trimmed beef tenderloin in a baking dish and season with salt and pepper. Make incisions on top.
  4. Brush half of the glaze over the beef; insert halved pineapple slices into the incisions.
  5. Bake until the internal temperature reaches 145°F (25-30 minutes). Increase heat to 400°F, apply remaining glaze, and bake for an additional 10 minutes.
  6. Rest for at least 10 minutes before slicing.
