- 1 pound chicken breast, cut into cubes
- 1 cup pineapple, cut into cubes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 cups chicken broth
- 1 cup jasmine rice
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 tablespoon soy sauce
- 1 teaspoon ginger, grated
- ¼ cup green onions, sliced
- 1 tablespoon sesame seeds

- Sauté onion, garlic, and bell pepper in the same skillet until softened (3–4 minutes).

- Add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper to the skillet; bring to a boil.
- Reduce heat, cover, and simmer for 18–20 minutes until rice is tender.
