Ingredients
- 1–1/2 pounds boneless, skinless chicken breasts (or thighs)
- 1/4 cup olive oil
- 2 limes
- 2 teaspoons minced garlic
- 3 cups diced pineapple
- 1 cup cilantro
- 2 tablespoons finely diced jalapeño
- 1/2 cup diced red onion
- 1 large avocado (finely sliced or diced)
- Coconut rice for serving
- 2 teaspoons honey
- 2–1/2 teaspoons ground cumin
- 1 teaspoon ground coriander
- Salt and pepper
Instructions
- Trim and pound chicken to an even thickness.
- Whisk together olive oil, lime juice, garlic, honey, cumin, coriander, salt, and pepper.
- Marinate chicken in half of the mixture for at least 30 minutes.
- Preheat grill to medium-high heat.
- Grill chicken for about 4–6 minutes per side until cooked through.
- Combine diced pineapple, cilantro, jalapeño, red onion, lime juice, cumin, salt & pepper for salsa.
- Serve grilled chicken over coconut rice topped with salsa and sliced avocado.
