  • 11/2 pounds boneless, skinless chicken breasts (or thighs)
  • 1/4 cup olive oil
  • 2 limes
  • 2 teaspoons minced garlic
  • 3 cups diced pineapple
  • 1 cup cilantro
  • 2 tablespoons finely diced jalapeño
  • 1/2 cup diced red onion
  • 1 large avocado (finely sliced or diced)
  • Coconut rice for serving
  • 2 teaspoons honey
  • 21/2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper

Instructions

  1. Trim and pound chicken to an even thickness.
  2. Whisk together olive oil, lime juice, garlic, honey, cumin, coriander, salt, and pepper.
  3. Marinate chicken in half of the mixture for at least 30 minutes.
  4. Preheat grill to medium-high heat.
  5. Grill chicken for about 4–6 minutes per side until cooked through.
  6. Combine diced pineapple, cilantro, jalapeño, red onion, lime juice, cumin, salt & pepper for salsa.
  7. Serve grilled chicken over coconut rice topped with salsa and sliced avocado.
