  • 1 cup canned pineapple juice
  • 1/4 cup olive oil
  • 1/3 cup packed brown sugar
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple vinegar
  • Asian chili paste (to taste)
  • 2 teaspoons cornstarch
  • 12 tablespoons lemon juice (1 for less tangy)
  • 2 tablespoons ketchup
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1/2 teaspoon onion powder
  • Chopped green onions for garnish
  • Additional Asian chili sauce (to taste)

Instructions

  1. In a medium bowl, whisk together all marinade ingredients. Reserve some for glazing.
  2. Marinate chicken in half of the mixture for 2-4 hours in the fridge.
  3. Grill at medium heat for 3-4 minutes per side or sauté in a hot non-stick skillet for about 6-8 minutes total.
  4. Simmer reserved marinade with cornstarch until thickened to use as glaze.
  5. Brush cooked chicken with glaze and serve.
