  • 78 tomatillos (husks removed and sliced in half)
  • 4 garlic cloves (kept whole)
  • 2 thick slices onion (about 1/2-inch thick each)
  • 2 slices of fresh pineapple (cored or 2 rings of canned pineapple, patted dry)
  • 1 or 2 chipotle peppers in adobo
  • 1 teaspoon kosher salt (optional plus more to taste)

Instructions

  1. Preheat the oven to the high broiler setting. Line a baking sheet with aluminum foil for easy cleanup.
  2. Place tomatillos, whole garlic cloves, and pineapple on the baking sheet. Broil for about 10 minutes until charred.
  3. Flip ingredients and broil again for an additional 5 minutes until gently charred.
  4. Transfer all ingredients to a blender or food processor. Add chipotle peppers and blend until chunky.
  5. Taste and adjust salt as needed before serving.
