  • 1 package instant pistachio pudding mix (3.4 ounces)
  • ¾ cup sour cream
  • ¾ cup oil
  • 3 eggs
  • 2 teaspoons vanilla extract
  • ½ cup water
  • ½ cup chopped pistachios
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your bundt pan with non-stick spray and flour.
  2. In a stand mixer, combine yellow cake mix and pistachio pudding mix; whisk well. Add sour cream, oil, eggs, water, and vanilla extract. Mix on low until combined, then increase to medium speed for about 30 seconds.
  3. Gently fold in chopped pistachios before pouring the batter into the prepared bundt pan.
  4. Bake for 45-50 minutes or until a toothpick inserted comes out clean. Allow cooling completely before removing from the pan.
