  • 2 Tbsp butter
  • 2 Tbsp all-purpose flour
  • 1 1/2 cups heavy whipping cream
  • 8 oz Pepper Jack cheese (block)
  • 4 oz sharp white cheddar cheese (block)
  • 2 jalapeños
  • 1/4 cup diced green onion
  • 3 garlic cloves
  • 1 large red bell pepper
  • Pinch cayenne pepper (to taste)
  • Salt

Instructions

  1. Grate both cheeses and set aside. Dice jalapeños (removing seeds for less heat), mince garlic, and dice bell pepper and green onions.
  2. In a heavy-bottomed sauce pot, melt butter over medium heat. Add diced bell pepper and garlic; sauté until softened.
  3. Sprinkle flour over the mixture, stir to coat, then gradually whisk in heavy cream while stirring continuously. Add salt and cayenne pepper.
  4. Lower the heat to medium-low and add cheeses one handful at a time, stirring until melted and smooth.
  5. Stir in green onions and serve immediately with tortilla chips.
