  • 4 globe artichokes
  • 3 lemons
  • â…“ cup olive oil
  • 3 cloves garlic (minced)
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon Dijon mustard
  • 2 teaspoons chopped fresh parsley (plus more for garnish)

Instructions

  1. Preheat the oven to 475°F. Grease a baking dish with olive oil.
  2. Trim and prepare the artichokes: cut stems, remove tough leaves, and slice in half to clean out fuzzy centers.
  3. Soak artichokes in water mixed with the juice of one lemon for 3-5 minutes, then season with olive oil, salt, and pepper.
  4. Arrange cut-side down in the baking dish with halved lemons beside them. Cover with foil and roast for 25-30 minutes until tender.
  5. For the sauce, squeeze cooked lemons into a bowl and mix in olive oil, minced garlic, mustard, and parsley; season to taste.
